Truffe De Chine potatoes are skinny and oblong, the size and shape of the fingerling potato. The skin is dark blue almost black. The flesh is dark violet-blue and the flavor is nutty and smells like chestnuts. These potatoes don't lose their color when they are cooked.
The waxy potatoes are perfect for stews and soups. However, every potato is easily made into a puree, French fries, or chips.
Store in a cool, dry, and dark place away from moisture and refrigeration and they will keep up to three weeks.
