Purslane is a low-spreading, quickly growing weed that spreads from a single taproot to produce flat, circular mats that range in diameter from 40 to 90 cm. When the plant is fully grown, it will have thick, cylindrical, reddish-colored stems that branch out to around 30 centimeters in length. The five-centimeter-long, succulent, meaty, spoon-shaped leaves develop alternately along the stems. All of the plant's edible parts stems, leaves, and flower buds have a crisp, cucumber-like texture with a flavor that's a little salty, tangy, lemony, and peppery.
