This dark green, oval-shape fruit is extremely large in comparison to other mangoes. The Keitt has the least amount of fiber and the majority of it is typically found right around the pit. It has a tart but sweet flesh, somewhat reminiscent of a sweet Meyer lemon, and when ripe it has a buttery smooth texture. These mangos stay a green color even when they're perfectly ripe.
Mango is one of the sweetest fruits and lower in fiber than other fruits, so a good rule of thumb is not to exceed two servings a day. The United States Department of Agriculture recommends that adults eat 1 1/2 to 2 cups of fruit per day.
Once ripe, mangos should be moved to the refrigerator, which will slow down the ripening process. Whole, ripe mangos may be stored for up to five days in the refrigerator. Mangos can be peeled, cubed and placed in an airtight container in the refrigerator for several days or in the freezer for up to six months.
