  • Rainbow carrots are a marvelous mix of colorful baby carrots including white, dark red, deep purple, and light yellow. Baby Rainbow carrots range in size from 2 to 4 inches in length. Petite in size, these Rainbow baby carrots offer a strong sweet carrot flavor with mild herbaceous undertones.

  • Carrots are mostly used in salads and eaten raw in many cases because they add a healthy and crunchy feel and taste to the dish. They could also be cooked, stir-fried, boiled, and mashed instead of potatoes.

  • Raw carrots, when properly stored will usually stay fresh for around 3 to 4 weeks in the fridge. If your carrots are sliced or chopped, you can store them in the fridge, and they'll last for about 2 to 3 weeks.

  • Roasted Rainbow Carrots

    Ingredients:

    1 1/2 pounds rainbow carrots
    1 tablespoon olive oil
    1 tablespoon brown sugar
    salt and pepper to taste

    Instructions:

    1. Preheat oven to 425 F.
    2. Peel carrots and cut them in half lengthwise.
    3. Toss carrots with olive oil and brown sugar. Season with salt & pepper. Place on a baking pan and roast for 15 minutes.
    4. Stir and roast an additional 10-15 minutes or just until tender when pierced with a fork.
