A plum tomato, also known as a processing tomato or paste tomato, is a type of tomato bred for sauce and packing purposes. It is generally oval or cylindrical in shape, with significantly fewer locules (seed compartments, usually only two) than standard round tomatoes and a generally higher solid content.
Plum tomatoes are the best to make sauces, juice, and tomato paste. They are essential in tomato sauce because they have less liquid than other types of tomatoes.
Keep at room temperature, and out of direct sunlight. And most importantly to keep them fresher longer, store them stem side down while they finish ripening.
