Jizan bananas have a thin, pale yellow peel. As their name suggests, they are from Jizan province, small in size and usually looking not so attractive. Don't be misguided by the outside looking. Bananas from Jizan have a very dense and creamy texture and once ripe their flavor is rich and sweet with vanilla and caramel undertones.
Jizan bananas are a quintessential fresh eating banana and can be used as a dessert banana as well. Their sweetness lends to many recipes in various applications. Jizan bananas can be a principal ingredient in smoothies, baby food, pudding, cakes, muffins, bread, cookies, ice cream, and tarts. Try to prepare Masoob, a traditional Yemeni dessert. Masoob is a banana-based dessert made from over-ripe bananas, ground flatbread, cream, cheese, dates, and honey.
It is best to keep them out of the fridge until they are fully ripened. At that point refrigerating them will help keep them from becoming overripe.
