Green almonds are immature regular almonds that are still young delicate and milky. Leave a green almond on the tree and it loses its fuzz, hardens, and turns brown. They are available for a short period of time.
Green almonds are often served with just a sprinkling of sea salt. You can use them in pasta, stews, and salads. Add them to a jam, or even turn them into a beverage.
Keep green almonds stored in the fridge for up to three weeks.

1 lb. green almonds
1/2 cup olive oil
1/2 tsp. sugar
3 cloves garlic, minced
1/2 small yellow onion, minced
1 orange, juiced
Kosher salt, to taste
2 tbsp. roughly chopped dill
